A rich and cozy one-pot soup made with savory Italian-style sausage, tender ditalini pasta, vegetables, and a creamy Parmesan broth that comes together quickly but tastes slow cooked.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound Italian-style chicken or turkey sausage, casings removed
  • 1 medium yellow onion, finely diced
  • 2 medium carrots, peeled and diced
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 2 tablespoons all-purpose flour
  • 5 cups chicken broth
  • 1 cup water
  • 1 cup ditalini pasta
  • 3/4 cup heavy cream or half-and-half
  • 3/4 cup freshly grated Parmesan cheese
  • 2 cups chopped kale or baby spinach (optional)
  • Salt and black pepper to taste
  • Red pepper flakes to taste (optional)


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add sausage and cook, breaking it up, until browned and fully cooked.
  3. Remove sausage from the pot and set aside.
  4. Add onion and carrots to the pot and cook until softened.
  5. Add garlic and Italian seasoning and cook until fragrant.
  6. Sprinkle in flour and stir for 1 minute.
  7. Slowly add chicken broth and water while stirring.
  8. Bring soup to a gentle boil.
  9. Add ditalini pasta and cook until just tender.
  10. Reduce heat to low and stir in cooked sausage.
  11. Add cream and Parmesan cheese and stir until smooth.
  12. Add kale or spinach and cook until wilted.
  13. Season with salt, pepper, and red pepper flakes if using.
  14. Serve hot.

Notes

Add the cream over low heat and use freshly grated Parmesan for the best texture and flavor.
