A rich and cozy one-pot soup made with savory Italian-style sausage, tender ditalini pasta, vegetables, and a creamy Parmesan broth that comes together quickly but tastes slow cooked.
Ingredients
- 1 tablespoon olive oil
- 1 pound Italian-style chicken or turkey sausage, casings removed
- 1 medium yellow onion, finely diced
- 2 medium carrots, peeled and diced
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 2 tablespoons all-purpose flour
- 5 cups chicken broth
- 1 cup water
- 1 cup ditalini pasta
- 3/4 cup heavy cream or half-and-half
- 3/4 cup freshly grated Parmesan cheese
- 2 cups chopped kale or baby spinach (optional)
- Salt and black pepper to taste
- Red pepper flakes to taste (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add sausage and cook, breaking it up, until browned and fully cooked.
- Remove sausage from the pot and set aside.
- Add onion and carrots to the pot and cook until softened.
- Add garlic and Italian seasoning and cook until fragrant.
- Sprinkle in flour and stir for 1 minute.
- Slowly add chicken broth and water while stirring.
- Bring soup to a gentle boil.
- Add ditalini pasta and cook until just tender.
- Reduce heat to low and stir in cooked sausage.
- Add cream and Parmesan cheese and stir until smooth.
- Add kale or spinach and cook until wilted.
- Season with salt, pepper, and red pepper flakes if using.
- Serve hot.
Notes
Add the cream over low heat and use freshly grated Parmesan for the best texture and flavor.
