Description

A comforting one-skillet dinner with juicy chicken, tender potatoes, and a rich garlic Parmesan sauce finished with melted mozzarella.


Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-size pieces
  • 4 to 5 medium russet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons butter
  • 1 to 2 tablespoons minced garlic
  • 3 to 4 tablespoons garlic Parmesan sauce
  • 1 cup shredded mozzarella cheese
  • Chopped fresh parsley, optional
  • Extra grated Parmesan cheese, optional


Instructions

  1. Peel and cube the potatoes, then toss with olive oil, garlic powder, paprika, salt, and black pepper.
  2. Cook the potatoes in an air fryer at 400ยฐF for 15 to 20 minutes or roast in the oven at 400ยฐF for about 30 minutes until tender.
  3. Season the chicken lightly with salt, pepper, and garlic powder.
  4. Heat a large skillet over medium heat and melt the butter.
  5. Add the chicken and cook for 6 to 8 minutes until cooked through and lightly golden.
  6. Reduce heat to medium-low and add minced garlic, cooking for about 30 seconds.
  7. Stir in the garlic Parmesan sauce until the chicken is well coated.
  8. Add the cooked potatoes and gently stir to combine.
  9. Sprinkle mozzarella cheese over the top, cover, and cook for 2 to 3 minutes until melted.
  10. Remove from heat, garnish if desired, and serve hot.

Notes

Do not overcrowd the skillet when cooking the chicken and add garlic last to prevent burning.
