Description

Creamy and Easy Hamburger Potato Soup Recipe is a comforting one-pot soup made with tender potatoes, savory ground beef, vegetables, and a rich creamy broth that comes together quickly and easily.


Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 pound lean ground beef
  • 1 medium onion, diced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 3 tablespoons all-purpose flour
  • Salt and black pepper, to taste
  • 4 cups chicken broth or beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 cup heavy cream
  • 1 1/2 pounds russet potatoes, peeled and diced
  • 1 cup corn kernels, fresh or frozen


Instructions

  1. Heat olive oil and butter in a large pot over medium heat.
  2. Add ground beef and cook until browned, breaking it up as it cooks.
  3. Season lightly with salt and pepper, drain excess fat if needed, and remove beef from pot.
  4. Add onion, carrots, and celery to the same pot and cook until softened.
  5. Stir in garlic and Italian seasoning and cook until fragrant.
  6. Sprinkle flour over vegetables and stir well, cooking for 1 minute.
  7. Slowly add broth while stirring to prevent lumps.
  8. Add Worcestershire sauce and bring to a gentle simmer.
  9. Add potatoes, corn, and cooked ground beef back to the pot.
  10. Simmer uncovered until potatoes are tender.
  11. Lower heat and stir in heavy cream.
  12. Warm gently without boiling and adjust seasoning as needed.
  13. Serve hot.

Notes

For a thicker soup, mash some of the potatoes against the side of the pot before serving.
