Ingredients
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 pound lean ground beef
- 1 medium onion, diced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 3 tablespoons all-purpose flour
- Salt and black pepper, to taste
- 4 cups chicken broth or beef broth
- 1 tablespoon Worcestershire sauce
- 1 cup heavy cream
- 1 1/2 pounds russet potatoes, peeled and diced
- 1 cup corn kernels, fresh or frozen
Instructions
- Heat olive oil and butter in a large pot over medium heat.
- Add ground beef and cook until browned, breaking it up as it cooks.
- Season lightly with salt and pepper, drain excess fat if needed, and remove beef from pot.
- Add onion, carrots, and celery to the same pot and cook until softened.
- Stir in garlic and Italian seasoning and cook until fragrant.
- Sprinkle flour over vegetables and stir well, cooking for 1 minute.
- Slowly add broth while stirring to prevent lumps.
- Add Worcestershire sauce and bring to a gentle simmer.
- Add potatoes, corn, and cooked ground beef back to the pot.
- Simmer uncovered until potatoes are tender.
- Lower heat and stir in heavy cream.
- Warm gently without boiling and adjust seasoning as needed.
- Serve hot.
Notes
For a thicker soup, mash some of the potatoes against the side of the pot before serving.
