Description

Creamy Cucumber Salad is a timeless, refreshing side dish made with crisp cucumbers and a cool, tangy dressing. Simple, budget-friendly, and perfect for warm weather meals, potlucks, and family dinners.


Ingredients

  • 3 large cucumbers, thinly sliced
  • 1/2 teaspoon salt
  • 2 tablespoons thinly sliced red onion (optional)
  • 3/4 cup sour cream
  • 2 tablespoons white vinegar or apple cider vinegar
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh dill, finely chopped (or 1 teaspoon dried dill)


Instructions

  1. Wash and dry the cucumbers, then slice them thinly.
  2. Place cucumber slices in a colander, sprinkle with salt, and let sit for 20 minutes.
  3. In a bowl, whisk together sour cream, vinegar, sugar, black pepper, and dill until smooth.
  4. Gently squeeze excess moisture from cucumbers.
  5. Add cucumbers and red onion to the dressing.
  6. Toss gently until evenly coated.
  7. Cover and refrigerate for at least 30 minutes before serving.
  8. Stir once more before serving and garnish with extra dill if desired.

Notes

Salting the cucumbers helps prevent a watery salad. Greek yogurt can be used instead of sour cream for a lighter option.
