Ingredients
- 3 large cucumbers, thinly sliced
- 1/2 teaspoon salt
- 2 tablespoons thinly sliced red onion (optional)
- 3/4 cup sour cream
- 2 tablespoons white vinegar or apple cider vinegar
- 2 tablespoons granulated sugar
- 1/4 teaspoon black pepper
- 1 tablespoon fresh dill, finely chopped (or 1 teaspoon dried dill)
Instructions
- Wash and dry the cucumbers, then slice them thinly.
- Place cucumber slices in a colander, sprinkle with salt, and let sit for 20 minutes.
- In a bowl, whisk together sour cream, vinegar, sugar, black pepper, and dill until smooth.
- Gently squeeze excess moisture from cucumbers.
- Add cucumbers and red onion to the dressing.
- Toss gently until evenly coated.
- Cover and refrigerate for at least 30 minutes before serving.
- Stir once more before serving and garnish with extra dill if desired.
Notes
Salting the cucumbers helps prevent a watery salad. Greek yogurt can be used instead of sour cream for a lighter option.
