Easy Creamy Crack Chicken Gnocchi Recipe is a cozy one-pan dinner made with pillowy gnocchi, tender chicken, crispy bacon, and a rich cheesy cream sauce that comes together quickly for a comforting weeknight meal.


Ingredients

  • 1 pound potato gnocchi
  • 2 cups cooked chicken, shredded or diced
  • 4 slices bacon, chopped
  • 2 cloves garlic, minced
  • 4 ounces cream cheese, softened
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Cook gnocchi in salted boiling water according to package instructions, then drain and set aside.
  2. In a large skillet over medium heat, cook chopped bacon until crispy and remove to a plate, leaving about 1 tablespoon drippings.
  3. Add garlic to the skillet and sautรฉ for 30 seconds until fragrant.
  4. Lower heat and whisk in cream cheese, chicken broth, and heavy cream until smooth.
  5. Stir in cooked chicken and gnocchi and simmer for 3 to 5 minutes.
  6. Add shredded cheddar cheese and stir until melted.
  7. Return bacon to the skillet and season with salt and black pepper to taste.
  8. Garnish with fresh parsley and serve hot.

Notes

Use room-temperature cream cheese for a smooth sauce and add a splash of broth if the sauce thickens too much.
