Ingredients

  • 8 lasagna noodles, broken into bite-sized pieces
  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 500g ground Italian sausage or beef
  • 1 can (400g) diced tomatoes
  • 1 cup tomato sauce
  • 4 cups chicken or vegetable broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp cream cheese
  • Fresh parsley for garnish


Instructions

  1. Heat olive oil in a large pot over medium heat. Sautรฉ diced onions and minced garlic until fragrant.
  2. Add ground sausage or beef and cook until browned. Drain excess fat.
  3. Stir in diced tomatoes, tomato sauce, broth, and seasonings. Bring to a simmer.
  4. Add broken lasagna noodles and cook until al dente, about 15โ€“20 minutes.
  5. Lower the heat and stir in heavy cream, mozzarella, Parmesan, and cream cheese until melted and smooth.
  6. Adjust seasoning to taste and simmer gently until creamy and thickened.
  7. Serve hot, garnished with fresh parsley or extra Parmesan. Pair with crusty bread or salad for a full meal.

Notes

Use low heat when adding cheese to prevent separation. For a lighter version, swap heavy cream with half-and-half. Add spinach, mushrooms, or zucchini for extra nutrition.
