A rich, hearty, and creamy soup inspired by the classic flavors of Alfredo and lasagna โ the ultimate comfort food for cozy evenings.
Ingredients
- 8 lasagna noodles, broken into bite-sized pieces
- 1 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 500g ground Italian sausage or beef
- 1 can (400g) diced tomatoes
- 1 cup tomato sauce
- 4 cups chicken or vegetable broth
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tbsp cream cheese
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Sautรฉ diced onions and minced garlic until fragrant.
- Add ground sausage or beef and cook until browned. Drain excess fat.
- Stir in diced tomatoes, tomato sauce, broth, and seasonings. Bring to a simmer.
- Add broken lasagna noodles and cook until al dente, about 15โ20 minutes.
- Lower the heat and stir in heavy cream, mozzarella, Parmesan, and cream cheese until melted and smooth.
- Adjust seasoning to taste and simmer gently until creamy and thickened.
- Serve hot, garnished with fresh parsley or extra Parmesan. Pair with crusty bread or salad for a full meal.
Notes
Use low heat when adding cheese to prevent separation. For a lighter version, swap heavy cream with half-and-half. Add spinach, mushrooms, or zucchini for extra nutrition.
