Cozy Hobo Casserole Ground Beef for Family Dinners is a hearty, comforting baked meal made with seasoned ground beef, tender potatoes, creamy sauce, and melted cheese, perfect for easy family dinners.


Ingredients

  • pounds ground beef
  • 4 to 5 medium russet potatoes, thinly sliced
  • 1 medium onion, thinly sliced
  • 1 can cream of mushroom soup or cream of chicken soup
  • ¾ cup milk
  • 1½ cups shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Paprika or dried parsley for garnish (optional)
  • Frozen peas or corn (optional)


Instructions

  1. Preheat oven to 375°F.
  2. Heat a large skillet over medium heat.
  3. Add ground beef and cook 6 to 8 minutes, breaking it apart as it browns.
  4. Add sliced onion and cook until softened.
  5. Season with garlic powder, salt, and black pepper.
  6. Drain excess grease and set aside.
  7. In a bowl, whisk together cream of mushroom soup and milk until smooth.
  8. Lightly grease a 9×13-inch baking dish.
  9. Layer half of the sliced potatoes in the bottom of the dish.
  10. Top with half of the ground beef mixture.
  11. Pour half of the creamy sauce over the beef.
  12. Repeat layers with remaining potatoes, beef, and sauce.
  13. Cover tightly with foil and bake for 60 minutes.
  14. Remove foil and sprinkle shredded cheese evenly on top.
  15. Bake uncovered for 10 to 15 minutes until cheese is melted and bubbly.
  16. Let rest 10 minutes before serving.

Slice potatoes evenly for best results and allow the casserole to rest before serving so it sets properly.
