Ingredients
- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 can diced tomatoes (14.5 ounces)
- 1 1/2 cups dry orzo
- 3 cups chicken broth
- 1 teaspoon Italian seasoning
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups baby spinach (optional)
- 1/2 cup grated Parmesan cheese (optional)
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large deep skillet. Sautรฉ diced onion for 4โ5 minutes, then add garlic and cook until fragrant.
- Add ground turkey and cook until browned, breaking it apart. Season with salt and pepper.
- Stir in tomato paste, Italian seasoning, basil, and oregano. Cook 1โ2 minutes to deepen flavor.
- Add diced tomatoes, dry orzo, and chicken broth. Stir well and bring to a gentle simmer.
- Simmer uncovered for 12โ15 minutes, stirring occasionally, until orzo is tender. Add extra broth if needed.
- Stir in spinach and Parmesan, if using. Adjust seasoning and garnish with parsley.
Notes
Use 93% lean turkey for best moisture. Add broth slowly if using gluten-free orzo, and adjust herbs or seasoning to taste.
