Ingredients

  • 1 pound ground turkey
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 can diced tomatoes (14.5 ounces)
  • 1 1/2 cups dry orzo
  • 3 cups chicken broth
  • 1 teaspoon Italian seasoning
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups baby spinach (optional)
  • 1/2 cup grated Parmesan cheese (optional)
  • Fresh parsley for garnish


Instructions

  1. Heat olive oil in a large deep skillet. Sautรฉ diced onion for 4โ€“5 minutes, then add garlic and cook until fragrant.
  2. Add ground turkey and cook until browned, breaking it apart. Season with salt and pepper.
  3. Stir in tomato paste, Italian seasoning, basil, and oregano. Cook 1โ€“2 minutes to deepen flavor.
  4. Add diced tomatoes, dry orzo, and chicken broth. Stir well and bring to a gentle simmer.
  5. Simmer uncovered for 12โ€“15 minutes, stirring occasionally, until orzo is tender. Add extra broth if needed.
  6. Stir in spinach and Parmesan, if using. Adjust seasoning and garnish with parsley.

Notes

Use 93% lean turkey for best moisture. Add broth slowly if using gluten-free orzo, and adjust herbs or seasoning to taste.
