Description
A cozy, creamy soup that tastes just like a classic cheeseburger with macaroni. Made with seasoned ground beef, tender pasta, vegetables, and plenty of melted cheese, this family-friendly soup is perfect for busy weeknights and chilly evenings.
Ingredients
- 1 pound lean ground beef
- 1 medium yellow onion, diced
- 2 teaspoons garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- 4 cups beef broth
- 1 cup carrots, diced small
- 1 cup uncooked elbow macaroni
- 3 tablespoons tomato paste
- 1 cup heavy cream or half-and-half
- 2 cups shredded cheddar, Colby jack, or cheese blend
Instructions
- Heat a large pot or Instant Pot on sautรฉ mode and cook the ground beef and diced onion until browned and softened. Drain excess grease if needed.
- Stir in garlic powder, salt, black pepper, Italian seasoning, and paprika.
- Add beef broth, carrots, uncooked macaroni, and tomato paste. Stir well to combine.
- For stovetop cooking, bring to a gentle boil and simmer 12 to 15 minutes until pasta and carrots are tender.
- For Instant Pot, pressure cook on high for 3 minutes, then allow a 5-minute natural release before releasing remaining pressure.
- Turn off the heat and slowly stir in the cream.
- Add shredded cheese a handful at a time, stirring until melted and smooth.
- Taste and adjust seasoning, then serve hot.
Notes
Add dairy off the heat to prevent curdling. If the soup thickens too much, add a splash of broth or milk when reheating.
