Ingredients
- 340 g (12 oz) pasta (penne, fusilli, spaghetti, or preferred shape)
- 1 cup full-fat cottage cheese
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- ½ teaspoon salt, to taste
- ¼ teaspoon black pepper
- ½ cup reserved pasta cooking water
- ¼ cup grated parmesan-style cheese (optional)
- Fresh herbs such as basil, parsley, or thyme (optional)
- Red pepper flakes (optional)
- Sautéed vegetables like spinach, mushrooms, cherry tomatoes, or zucchini (optional)
Instructions
- Bring a large pot of salted water to a boil and cook the pasta until al dente. Reserve ½ cup of pasta water, then drain.
- Add the cottage cheese to a blender or food processor and blend until completely smooth and creamy.
- Heat the olive oil in a large skillet over medium heat and sauté the minced garlic for about 30 seconds until fragrant.
- Lower the heat and add the blended cottage cheese to the skillet, stirring gently.
- Add reserved pasta water a little at a time until the sauce reaches a smooth, creamy consistency.
- Season with salt and black pepper and stir until warmed through.
- Add the cooked pasta to the sauce and toss until evenly coated.
- Stir in parmesan-style cheese, herbs, or vegetables if using.
- Taste, adjust seasoning if needed, and serve immediately.
