Ingredients

  • 3โ€“4 pound corned beef brisket (with spice packet)
  • 1 large onion, quartered
  • 3 cloves garlic, smashed
  • 2 bay leaves
  • 1 teaspoon whole peppercorns
  • 8โ€“10 cups water or low-sodium beef broth
  • 1ยฝ pounds Yukon gold or red potatoes
  • 4 large carrots, cut into chunks
  • 1 small green cabbage, cut into wedges
  • Whole-grain mustard (optional)
  • Fresh chopped parsley (optional)
  • Prepared horseradish sauce (optional)


Instructions

  1. Rinse corned beef under cold water and pat dry.
  2. Place brisket in a large Dutch oven or heavy pot.
  3. Add onion, garlic, bay leaves, peppercorns, and spice packet.
  4. Pour in enough water or broth to fully cover the brisket.
  5. Bring to a gentle boil, then reduce to a low simmer.
  6. Cover and cook for 2ยฝ to 3ยฝ hours until fork-tender.
  7. Add potatoes and carrots about 40 minutes before brisket is done.
  8. Simmer until vegetables begin to soften.
  9. Add cabbage wedges during the final 15โ€“20 minutes.
  10. Remove brisket and let rest for 10โ€“15 minutes.
  11. Slice against the grain into thin slices.
  12. Arrange beef and vegetables on a platter.
  13. Ladle a little cooking broth over the top.
  14. Garnish with parsley and serve with mustard or horseradish sauce if desired.
