- 4 large carrots, cut into chunks

Instructions
- Rinse corned beef under cold water and pat dry.
- Place brisket in a large Dutch oven or heavy pot.
- Add onion, garlic, bay leaves, peppercorns, and spice packet.
- Pour in enough water or broth to fully cover the brisket.
- Bring to a gentle boil, then reduce to a low simmer.
