Ingredients

  • 4 cups carrots, peeled and julienned
  • 2 green onions, thinly sliced
  • 1/4 cup fresh cilantro, finely chopped
  • 1/2 teaspoon kosher salt
  • 2 tablespoons sesame oil
  • 2 tablespoons chili crisp
  • 1 tablespoon honey
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh ginger, finely grated
  • 1 tablespoon toasted sesame seeds


Instructions

  1. Place julienned carrots in a large bowl, sprinkle with salt, and toss gently.
  2. Let carrots sit for 5 minutes, then add green onions and cilantro.
  3. In a small heatproof bowl, combine chili crisp, ginger, honey, and sesame seeds.
  4. Heat sesame oil until shimmering, then carefully pour over chili crisp mixture and stir.
  5. Add lemon juice to the dressing and mix well.
  6. Drain excess liquid from carrots if needed.
  7. Pour dressing over carrots and toss until evenly coated.
  8. Taste and adjust seasoning as needed.
