Ingredients
- 1.5 lb boneless, skinless chicken breasts or thighs
- 2 tbsp olive oil
- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 1 jalapeรฑo, seeded and minced (optional)
- 1 can (14.5 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 6 cups chicken broth
- 1.5 tsp ground cumin
- 1 tsp chili powder
- 0.5 tsp smoked paprika
- 0.5 tsp dried oregano
- 1 tsp salt, or to taste
- 0.5 tsp black pepper
- Corn tortilla strips
- Diced avocado
- Fresh cilantro
- Lime wedges
- Diced red onion (optional)
Instructions
- Heat olive oil in a large pot over medium heat and sautรฉ the diced onion until softened.
- Add garlic and jalapeรฑo and cook briefly until fragrant.
- Stir in cumin, chili powder, smoked paprika, oregano, salt, and black pepper and toast the spices.
- Add diced tomatoes, tomato sauce, and chicken broth and bring to a gentle simmer.
- Add chicken to the pot and simmer until fully cooked and tender.
- Remove chicken, shred with forks, and return it to the soup.
- Simmer for a few more minutes and adjust seasoning if needed.
- Serve hot topped with tortilla strips, avocado, cilantro, red onion, and lime juice.
Notes
Toast the spices for deeper flavor and add tortilla strips just before serving to keep them crisp.
