Description

A hearty one-pot chicken taco soup loaded with bold taco flavor, tender chicken, beans, corn, and tomatoes, perfect for easy weeknight dinners.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 pound boneless skinless chicken breasts
  • 2 tablespoons taco seasoning
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • Salt and black pepper, to taste


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook until softened.
  3. Add garlic and cook until fragrant.
  4. Stir in taco seasoning and cook briefly to bloom spices.
  5. Add chicken breasts and turn to coat.
  6. Pour in chicken broth.
  7. Add diced tomatoes, tomatoes with green chilies, black beans, and corn.
  8. Bring to a boil, then reduce heat and simmer covered until chicken is cooked.
  9. Remove chicken, shred with forks, and return to the pot.
  10. Simmer uncovered until flavors blend.
  11. Season with salt and black pepper before serving.

Notes

Chicken thighs or rotisserie chicken can be used. Mash some beans to naturally thicken the soup if desired.
