Description
A hearty one-pot chicken taco soup loaded with bold taco flavor, tender chicken, beans, corn, and tomatoes, perfect for easy weeknight dinners.
Ingredients
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 pound boneless skinless chicken breasts
- 2 tablespoons taco seasoning
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 can (10 oz) diced tomatoes with green chilies
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- Salt and black pepper, to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and cook until softened.
- Add garlic and cook until fragrant.
- Stir in taco seasoning and cook briefly to bloom spices.
- Add chicken breasts and turn to coat.
- Pour in chicken broth.
- Add diced tomatoes, tomatoes with green chilies, black beans, and corn.
- Bring to a boil, then reduce heat and simmer covered until chicken is cooked.
- Remove chicken, shred with forks, and return to the pot.
- Simmer uncovered until flavors blend.
- Season with salt and black pepper before serving.
Notes
Chicken thighs or rotisserie chicken can be used. Mash some beans to naturally thicken the soup if desired.
