Ingredients

  • 1 ยฝ pounds boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 medium zucchini, sliced into half-moons
  • 2 tablespoons olive oil or avocado oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 3 green onions, sliced
  • ยผ cup low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon cornstarch
  • ยผ cup water
  • ยผ teaspoon red pepper flakes (optional)


Instructions

  1. In a small bowl, whisk together soy sauce, rice vinegar, honey, water, cornstarch, garlic, ginger, and red pepper flakes until fully combined.
  2. Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.
  3. Add the chicken in a single layer and cook for 4โ€“5 minutes, stirring occasionally, until golden and cooked through.
  4. Remove the chicken from the skillet and set aside.
  5. Add the remaining tablespoon of oil to the skillet.
  6. Add the sliced zucchini and cook for 3โ€“4 minutes, stirring frequently, until tender-crisp.
  7. Return the cooked chicken to the skillet.
  8. Whisk the sauce again, then pour it into the pan.
  9. Cook for 1โ€“2 minutes, stirring constantly, until the sauce thickens and coats everything evenly.
  10. Sprinkle sliced green onions over the top.
  11. Serve immediately over rice, quinoa, or cauliflower rice.

Notes
