Ingredients

  • 2 cups cooked chicken, diced or shredded
  • 3 cups potatoes, peeled and diced
  • 3 tablespoons butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 4 cups chicken broth
  • 1½ cups milk or cream
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Optional: celery, carrots, fresh parsley or thyme


Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Add the chopped onion and cook until soft and translucent.
  3. Stir in the garlic and cook until fragrant.
  4. Sprinkle the flour over the mixture and stir continuously for 1 minute.
  5. Slowly whisk in the chicken broth until smooth.
  6. Add the milk or cream and stir well.
  7. Add the diced potatoes and bring to a gentle simmer.
  8. Cook until the potatoes are fork-tender.
  9. Stir in the cooked chicken.
  10. Season with salt and black pepper.
  11. Simmer gently until flavors are well combined.
  12. Adjust thickness with extra broth or milk if needed before serving.
