This easy cheesy potato soup is creamy, comforting, and ready in just 30 minutes, making it perfect for busy weeknights or cozy family dinners.


Ingredients

  • 3 cups potatoes, peeled and diced small
  • 2 cups chicken broth
  • 3 tablespoons butter
  • 1/2 medium yellow onion, finely chopped
  • 1/2 teaspoon minced garlic
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • Salt, to taste
  • Black pepper, to taste
  • 1 to 1 1/2 cups shredded cheddar cheese
  • Shredded cheese for topping (optional)
  • Sliced green onions (optional)
  • Turkey bacon bits or smoked turkey pieces (optional)
  • Sour cream (optional)


Instructions

  1. Add the diced potatoes and chicken broth to a pot and bring to a boil, then simmer for 10 to 12 minutes until potatoes are fork tender.
  2. In a separate saucepan, melt the butter over medium heat and cook the onion until softened.
  3. Add the garlic and cook briefly until fragrant.
  4. Sprinkle in the flour and stir constantly for about 1 minute.
  5. Slowly whisk in the milk and cook until the mixture thickens.
  6. Pour the creamy mixture into the pot with the potatoes and stir to combine.
  7. Season with salt and black pepper to taste.
  8. Add the shredded cheese and stir until fully melted and smooth.
  9. Lightly mash some of the potatoes if desired and serve hot with toppings.

Notes

For a thicker soup, mash more of the potatoes directly in the pot. Add the cheese gradually and stir constantly for the smoothest texture.
