Description

Simple and delicious carnivore pizza muffins made with eggs, cheese, and seasoned meat. These protein-packed, low-carb muffins deliver all the cheesy pizza flavor in an easy, grain-free format perfect for meal prep, snacks, or quick meals.


Ingredients

  • 6 large eggs
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded cheddar or Parmesan cheese
  • 1 pound ground beef or Italian-style sausage
  • ½ cup chopped beef pepperoni or mini slices
  • ¼ cup heavy cream or softened cream cheese
  • Salt to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the ground beef or sausage in a skillet over medium heat until fully browned, breaking it into small crumbles. Lightly season with salt and let cool slightly.
  3. In a large bowl, whisk together the eggs and heavy cream or softened cream cheese until smooth.
  4. Add the shredded cheeses, cooked meat, and pepperoni to the egg mixture and stir until evenly combined.
  5. Grease a muffin tin thoroughly and divide the mixture evenly among the cups, filling nearly to the top.
  6. Bake for 18–22 minutes, until the muffins are set and lightly golden on top.
  7. Let cool for 5 minutes before removing from the pan.

Notes

Allow the muffins to rest briefly after baking so they firm up. Silicone muffin liners work best for easy removal.
