Simple and delicious carnivore pizza muffins made with eggs, cheese, and seasoned meat. These protein-packed, low-carb muffins deliver all the cheesy pizza flavor in an easy, grain-free format perfect for meal prep, snacks, or quick meals.
Ingredients
- 6 large eggs
- 1 cup shredded mozzarella cheese
- ½ cup shredded cheddar or Parmesan cheese
- 1 pound ground beef or Italian-style sausage
- ½ cup chopped beef pepperoni or mini slices
- ¼ cup heavy cream or softened cream cheese
- Salt to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the ground beef or sausage in a skillet over medium heat until fully browned, breaking it into small crumbles. Lightly season with salt and let cool slightly.
- In a large bowl, whisk together the eggs and heavy cream or softened cream cheese until smooth.
- Add the shredded cheeses, cooked meat, and pepperoni to the egg mixture and stir until evenly combined.
- Grease a muffin tin thoroughly and divide the mixture evenly among the cups, filling nearly to the top.
- Bake for 18–22 minutes, until the muffins are set and lightly golden on top.
- Let cool for 5 minutes before removing from the pan.
Notes
Allow the muffins to rest briefly after baking so they firm up. Silicone muffin liners work best for easy removal.
