A classic no-bake treat made with a creamy peanut butter center dipped in rich chocolate, leaving just enough filling exposed for the traditional buckeye look. Easy to make, nostalgic, and perfect for holidays, parties, or gifting.
Ingredients
- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 2 cups semi-sweet chocolate chips
- 1 tablespoon coconut oil or vegetable shortening
Instructions
- In a large bowl, beat the peanut butter and softened butter until smooth and creamy.
- Add the powdered sugar and vanilla extract and mix until fully combined and thick.
- If the mixture is too soft, refrigerate for 15 to 20 minutes.
- Line a baking sheet with parchment paper.
- Scoop about 1 tablespoon of the mixture and roll into a smooth ball.
- Place on the prepared baking sheet and repeat with remaining mixture.
- Refrigerate the peanut butter balls for at least 30 minutes until firm.
- In a microwave-safe bowl, melt the chocolate chips with the coconut oil in 30-second intervals, stirring until smooth.
- Insert a toothpick into each peanut butter ball and dip into the melted chocolate, leaving a small circle of peanut butter exposed at the top.
- Place dipped buckeyes back on the baking sheet.
- Refrigerate for 20 to 30 minutes until the chocolate is set.
- Remove toothpicks and smooth tops if needed before serving.
Notes
Chill the peanut butter balls well before dipping to help the chocolate set smoothly. Store buckeyes chilled for best texture.
