Ingredients
- 3 tablespoons butter
- ½ cup chopped onion
- 1 cup Velveeta cheese (about 4 ounces), diced
- 1 can (10.75 ounces) cream of chicken soup
- 2 cups cooked white rice
- 2 cups broccoli (fresh or frozen)
Instructions
- Steam the broccoli until tender and bright green, then drain and set aside.
- In a saucepan, melt butter over medium heat and sauté the onion until soft and translucent.
- Add diced Velveeta cheese, cream of chicken soup, and cooked rice. Stir until the cheese melts and the mixture is smooth.
- Fold in the steamed broccoli and mix until evenly combined and heated through.
- Serve immediately or transfer to a baking dish and bake uncovered at 350°F (175°C) for 20 minutes until hot and bubbly.
Notes
Steam the broccoli instead of boiling for better texture. You can use cheddar instead of Velveeta, and cream of mushroom soup for a vegetarian option.
