Ingredients

  • 3 tablespoons butter
  • ½ cup chopped onion
  • 1 cup Velveeta cheese (about 4 ounces), diced
  • 1 can (10.75 ounces) cream of chicken soup
  • 2 cups cooked white rice
  • 2 cups broccoli (fresh or frozen)


Instructions

  1. Steam the broccoli until tender and bright green, then drain and set aside.
  2. In a saucepan, melt butter over medium heat and sauté the onion until soft and translucent.
  3. Add diced Velveeta cheese, cream of chicken soup, and cooked rice. Stir until the cheese melts and the mixture is smooth.
  4. Fold in the steamed broccoli and mix until evenly combined and heated through.
  5. Serve immediately or transfer to a baking dish and bake uncovered at 350°F (175°C) for 20 minutes until hot and bubbly.

Notes

Steam the broccoli instead of boiling for better texture. You can use cheddar instead of Velveeta, and cream of mushroom soup for a vegetarian option.
