Ingredients

  • 2 tablespoons olive oil or sunflower oil
  • 1 medium onion, finely chopped
  • 2 medium carrots, grated or julienned
  • 3 cloves garlic, minced
  • 3 medium beets, peeled and grated or julienned
  • 2 medium potatoes, peeled and diced
  • 2 cups green cabbage, thinly sliced
  • 6 cups vegetable broth or water
  • 2 tablespoons tomato paste or crushed tomatoes
  • 1 bay leaf
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper
  • Sour cream, for serving
  • Fresh dill or parsley, chopped, for serving


Instructions

  1. Wash, peel, and prepare all vegetables.
  2. Bring broth or water to a gentle boil in a large pot.
  3. Add diced potatoes and simmer until slightly tender.
  4. Heat oil in a skillet and sauté onion and carrots until softened.
  5. Add garlic and cook briefly until fragrant.
  6. Stir in beets and tomato paste and cook until softened.
  7. Transfer beet mixture to the pot.
  8. Add cabbage, bay leaf, salt, and black pepper.
  9. Simmer gently until all vegetables are tender.
  10. Remove bay leaf and adjust seasoning.
  11. Let rest briefly before serving.
