Description

A rich, hearty slow cooker chili made with seasoned ground beef, tomatoes, beans, and a bold blend of spices simmered to perfection.


Ingredients

  • 2 lb lean ground beef
  • 1 tablespoon olive oil
  • 1 large yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cans (14.5 oz each) diced tomatoes with green chilies
  • 3 cans (8 oz each) tomato sauce
  • 1/2 cup beef broth, optional
  • 1 can (15 oz) dark red kidney beans, drained and rinsed
  • 1 can (15 oz) light red kidney beans, drained and rinsed
  • 3 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • 1 teaspoon unsweetened cocoa powder
  • 1 tablespoon granulated sugar
  • Salt, to taste
  • Black pepper, to taste


Instructions

  1. Heat olive oil in a skillet over medium heat and cook the chopped onion until softened.
  2. Add minced garlic and cook for 30 seconds until fragrant.
  3. Transfer the onion and garlic to the crockpot.
  4. In the same skillet, brown the ground beef until fully cooked, then drain excess grease.
  5. Add the cooked beef to the crockpot.
  6. Pour in diced tomatoes with green chilies, tomato sauce, and beef broth if using.
  7. Add chili powder, cumin, paprika, coriander, cocoa powder, sugar, salt, and black pepper.
  8. Stir well to combine all ingredients.
  9. Cover and cook on low for 5 to 6 hours.
  10. Stir in the kidney beans during the last 15 minutes of cooking.
  11. Taste and adjust seasoning before serving.

Notes

For best flavor, brown the beef first and allow the chili to rest briefly before serving to thicken.
