Ingredients
- 6 packed cups baby spinach
- 1 cup sliced strawberries
- ยฝ cup blueberries
- ยฝ cup blackberries
- ยฝ cup pecans, roughly chopped
- ยฝ cup crumbled feta cheese
- 1 cup balsamic vinegar
- 2 tablespoons honey or maple syrup
Instructions
- Pour the balsamic vinegar and honey into a small saucepan and bring to a gentle boil.
- Reduce heat and simmer for 8โ10 minutes, stirring occasionally, until thickened. Remove from heat and let cool.
- Place chopped pecans in a dry skillet over medium heat and toast for 3โ5 minutes until fragrant. Let cool.
- Wash and thoroughly dry the spinach and place it in a large salad bowl.
- Add sliced strawberries, blueberries, and blackberries to the bowl.
- Sprinkle toasted pecans and crumbled feta evenly over the salad.
- Drizzle with balsamic glaze just before serving.
