Easy Berry Spinach Salad with Pecans and Feta is a fresh, colorful salad made with tender spinach, juicy berries, crunchy pecans, and creamy feta, finished with a sweet and tangy balsamic glaze.


Ingredients

  • 6 packed cups baby spinach
  • 1 cup sliced strawberries
  • ยฝ cup blueberries
  • ยฝ cup blackberries
  • ยฝ cup pecans, roughly chopped
  • ยฝ cup crumbled feta cheese
  • 1 cup balsamic vinegar
  • 2 tablespoons honey or maple syrup


Instructions

  1. Pour the balsamic vinegar and honey into a small saucepan and bring to a gentle boil.
  2. Reduce heat and simmer for 8โ€“10 minutes, stirring occasionally, until thickened. Remove from heat and let cool.
  3. Place chopped pecans in a dry skillet over medium heat and toast for 3โ€“5 minutes until fragrant. Let cool.
  4. Wash and thoroughly dry the spinach and place it in a large salad bowl.
  5. Add sliced strawberries, blueberries, and blackberries to the bowl.
  6. Sprinkle toasted pecans and crumbled feta evenly over the salad.
  7. Drizzle with balsamic glaze just before serving.
