Ingredients

  • 1 1/2 pounds boneless skinless chicken thighs or chicken breasts
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 12 ounces cremini mushrooms, sliced
  • 4 cloves garlic, minced
  • 1/4 cup balsamic vinegar
  • 3/4 cup heavy cream
  • 1/4 cup low sodium chicken broth
  • Fresh parsley, chopped, for garnish


Instructions

  1. Pat the chicken dry and season both sides with salt and black pepper.
  2. Heat olive oil in a large skillet over medium high heat.
  3. Sear the chicken for 4 to 5 minutes per side until golden brown, then remove and set aside.
  4. Reduce heat to medium and add butter to the skillet.
  5. Add sliced mushrooms and cook for 6 to 8 minutes until browned and tender.
  6. Stir in minced garlic and cook for 30 seconds until fragrant.
  7. Pour in balsamic vinegar and deglaze the pan, simmering for 1 to 2 minutes.
  8. Add chicken broth and heavy cream, stirring to combine.
  9. Bring sauce to a gentle simmer and cook for 3 to 5 minutes until slightly thickened.
  10. Return chicken to the skillet and spoon sauce over the top.
  11. Cover and cook on medium low heat for 8 to 10 minutes until chicken is cooked through.
  12. Garnish with fresh chopped parsley and serve.

Notes

Use chicken thighs for extra juiciness and do not rush browning the mushrooms, as this builds deep flavor in the sauce.
