Ingredients
- 1 1/2 pounds boneless skinless chicken thighs or chicken breasts
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- 12 ounces cremini mushrooms, sliced
- 4 cloves garlic, minced
- 1/4 cup balsamic vinegar
- 3/4 cup heavy cream
- 1/4 cup low sodium chicken broth
- Fresh parsley, chopped, for garnish
Instructions
- Pat the chicken dry and season both sides with salt and black pepper.
- Heat olive oil in a large skillet over medium high heat.
- Sear the chicken for 4 to 5 minutes per side until golden brown, then remove and set aside.
- Reduce heat to medium and add butter to the skillet.
- Add sliced mushrooms and cook for 6 to 8 minutes until browned and tender.
- Stir in minced garlic and cook for 30 seconds until fragrant.
- Pour in balsamic vinegar and deglaze the pan, simmering for 1 to 2 minutes.
- Add chicken broth and heavy cream, stirring to combine.
- Bring sauce to a gentle simmer and cook for 3 to 5 minutes until slightly thickened.
- Return chicken to the skillet and spoon sauce over the top.
- Cover and cook on medium low heat for 8 to 10 minutes until chicken is cooked through.
- Garnish with fresh chopped parsley and serve.
