Ingredients
- 2 lb baby potatoes or Yukon Gold potatoes
- 2 tbsp olive oil
- 1 oz ranch seasoning mix
- 0.25 tsp black pepper
- 1.5 cups shredded cheddar cheese or Colby Jack
- Chopped green onions (optional)
- Fresh parsley (optional)
Instructions
- Preheat oven to 400ยฐF and lightly grease a baking dish or line a baking sheet.
- Wash, dry, and cut potatoes into evenly sized bite-size pieces.
- Toss potatoes with olive oil, ranch seasoning, and black pepper until well coated.
- Spread potatoes in a single layer and bake for 30 to 35 minutes, stirring halfway through.
- Remove from oven and sprinkle shredded cheese evenly over the potatoes.
- Return to oven and bake for 5 to 7 minutes until cheese is melted and bubbly.
- Garnish with green onions or parsley if desired and serve hot.
