Description

Simple Baked Cheesy Ranch Potatoes Recipe is an easy, crowd-pleasing side dish made with tender roasted potatoes, savory ranch seasoning, and a generous layer of melted cheese.


Ingredients

  • 2 lb baby potatoes or Yukon Gold potatoes
  • 2 tbsp olive oil
  • 1 oz ranch seasoning mix
  • 0.25 tsp black pepper
  • 1.5 cups shredded cheddar cheese or Colby Jack
  • Chopped green onions (optional)
  • Fresh parsley (optional)


Instructions

  1. Preheat oven to 400ยฐF and lightly grease a baking dish or line a baking sheet.
  2. Wash, dry, and cut potatoes into evenly sized bite-size pieces.
  3. Toss potatoes with olive oil, ranch seasoning, and black pepper until well coated.
  4. Spread potatoes in a single layer and bake for 30 to 35 minutes, stirring halfway through.
  5. Remove from oven and sprinkle shredded cheese evenly over the potatoes.
  6. Return to oven and bake for 5 to 7 minutes until cheese is melted and bubbly.
  7. Garnish with green onions or parsley if desired and serve hot.
