Description

Avocado Toast with Poached Egg is one of the most popular choices in the healthy breakfast trend, combining creamy avocado, perfectly toasted bread, and a silky poached egg for a nourishing yet indulgent meal. Perfect for easy brunch recipes, simple spring meals, and Instagram brunch ideas.

Ingredients

  • 2 slices whole-grain or sourdough bread
  • 1 ripe avocado
  • 1โ€“2 teaspoons fresh lemon juice
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 2 large eggs
  • 4 cups water
  • 1 teaspoon white vinegar (optional)
  • Red pepper flakes (optional)
  • Cherry tomatoes, halved (optional)
  • Fresh herbs โ€“ parsley, chives, or cilantro (optional)
  • Everything bagel seasoning (optional)
  • Microgreens (optional)
  • Crumbled feta cheese (optional)

Instructions

  1. Toast bread slices until golden brown and crisp.
  2. Cut avocado, remove pit, and scoop flesh into a bowl.
  3. Add lemon juice, salt, and pepper, then mash until smooth but slightly chunky.
  4. Spread mashed avocado evenly over toasted bread.
  5. Bring water to a gentle simmer in a saucepan.
  6. Add vinegar if using.
  7. Crack egg into a small bowl.
  8. Create a gentle swirl in simmering water and slide egg into center.
  9. Cook for 3โ€“4 minutes for soft yolk.
  10. Remove with slotted spoon and drain on paper towel.
  11. Repeat with second egg.
  12. Place one poached egg on each avocado toast.
  13. Season lightly with salt and pepper.
  14. Add optional toppings as desired.
  15. Serve immediately.

Notes

Use fresh eggs for best poaching results. Keep water at a gentle simmer, not a rolling boil. Serve immediately for best texture and flavor.
