Description

Ingredients

  • 2 large cucumbers, sliced into half-moons
  • 2 ripe avocados, diced
  • ยผ cup chopped fresh dill or parsley
  • 2 green onions, thinly sliced
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • ยฝ teaspoon fine sea salt, or to taste
  • ยผ teaspoon black pepper


Instructions

  1. Wash and slice the cucumbers into thin half-moons.
  2. Cut avocados in half, remove pits, and dice into bite-sized pieces.
  3. Slice green onions and chop fresh herbs.
  4. In a small bowl, whisk olive oil, lemon juice, salt, and black pepper.
  5. Add cucumbers, avocados, green onions, and herbs to a large bowl.
  6. Drizzle dressing over the salad.
  7. Gently toss until evenly coated.
  8. Serve immediately for best texture and flavor.

Notes

Use ripe but firm avocados so they hold their shape. Add avocado last and toss gently. This salad is best served fresh.
