Ingredients
- 2 large cucumbers, sliced into half-moons
- 2 ripe avocados, diced
- ยผ cup chopped fresh dill or parsley
- 2 green onions, thinly sliced
- 3 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- ยฝ teaspoon fine sea salt, or to taste
- ยผ teaspoon black pepper
Instructions
- Wash and slice the cucumbers into thin half-moons.
- Cut avocados in half, remove pits, and dice into bite-sized pieces.
- Slice green onions and chop fresh herbs.
- In a small bowl, whisk olive oil, lemon juice, salt, and black pepper.
- Add cucumbers, avocados, green onions, and herbs to a large bowl.
- Drizzle dressing over the salad.
- Gently toss until evenly coated.
- Serve immediately for best texture and flavor.
Notes
Use ripe but firm avocados so they hold their shape. Add avocado last and toss gently. This salad is best served fresh.
