Ingredients

  • Soup Base Ingredients

    • 2 tablespoons olive oil

    • 1 medium onion, diced

    • 2 carrots, peeled and sliced

    • 2 celery stalks, sliced

    • 3 cloves garlic, minced

    • Salt and black pepper, to taste

    Broth and Protein

    • 1 pound chicken breasts or thighs, diced or shredded

    • 6 cups chicken broth

    • 1 can (14.5 oz) diced tomatoes, undrained

    • 1 bay leaf

    Pasta and Seasoning

    • ¾ cup small pasta (ditalini, small shells, or orzo)

    • 1 teaspoon dried oregano

    • ½ teaspoon dried basil

    • Optional: pinch of red pepper flakes


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the onion, carrots, and celery and cook until softened.
  3. Add the garlic and cook briefly until fragrant.
  4. Season lightly with salt and pepper.
  5. Stir in the diced tomatoes, chicken broth, oregano, basil, bay leaf, and red pepper flakes if using.
  6. Bring to a gentle boil.
  7. Add the chicken to the pot.
  8. Reduce heat and simmer until the chicken is cooked through.
  9. Stir in the pasta.
  10. Continue simmering until the pasta is al dente.
  11. Remove the bay leaf.
  12. Taste and adjust seasoning.
  13. Serve hot garnished with fresh parsley and lemon if desired.

Notes

Cook pasta just until al dente to avoid mushy texture. For make-ahead meals, cook pasta separately and add when reheating. Lemon added at the end brightens the flavors.
