2 tablespoons olive oil
1 medium onion, diced
2 carrots, peeled and sliced
2 celery stalks, sliced
3 cloves garlic, minced
Salt and black pepper, to taste
Broth and Protein
1 pound chicken breasts or thighs, diced or shredded
6 cups chicken broth
1 can (14.5 oz) diced tomatoes, undrained
1 bay leaf
Pasta and Seasoning
¾ cup small pasta (ditalini, small shells, or orzo)
1 teaspoon dried oregano
½ teaspoon dried basil
Optional: pinch of red pepper flakes
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the onion, carrots, and celery and cook until softened.
- Add the garlic and cook briefly until fragrant.
- Season lightly with salt and pepper.
- Stir in the diced tomatoes, chicken broth, oregano, basil, bay leaf, and red pepper flakes if using.
- Bring to a gentle boil.
- Add the chicken to the pot.
- Reduce heat and simmer until the chicken is cooked through.
- Stir in the pasta.
- Continue simmering until the pasta is al dente.
- Remove the bay leaf.
- Taste and adjust seasoning.
- Serve hot garnished with fresh parsley and lemon if desired.
Notes
Cook pasta just until al dente to avoid mushy texture. For make-ahead meals, cook pasta separately and add when reheating. Lemon added at the end brightens the flavors.
