Ingredients
- 2 cups shredded chicken or ground beef
- 8 corn tortillas
- 1 cup diced tomatoes
- 1 cup chopped onions
- 1 cup green chilies
- 1 1/2 cups queso fresco or Monterey Jack cheese
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp oregano
- 1 cup enchilada sauce or salsa
- 1 tbsp olive oil
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 350ยฐF (180ยฐC).
- Prepare the protein by cooking shredded chicken or ground beef until fully done.
- Chop the vegetables and set them aside.
- Warm the tortillas to make them pliable.
- In a mixing bowl, combine the cooked protein with diced tomatoes, onions, green chilies, and spices.
- Lightly oil your baking dish and spread a thin layer of enchilada sauce at the bottom.
- Layer tortillas on the base, followed by a layer of the meat mixture, cheese, and herbs.
- Repeat the layers until the dish is full, finishing with extra cheese and cilantro on top.
- Bake for 25โ30 minutes until the top is golden and bubbly.
- Let it rest for 5 minutes before serving. Garnish with fresh cilantro and serve warm.
