Ingredients

  • 2 cups shredded chicken or ground beef
  • 8 corn tortillas
  • 1 cup diced tomatoes
  • 1 cup chopped onions
  • 1 cup green chilies
  • 1 1/2 cups queso fresco or Monterey Jack cheese
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp oregano
  • 1 cup enchilada sauce or salsa
  • 1 tbsp olive oil
  • Fresh cilantro for garnish


Instructions

  1. Preheat the oven to 350ยฐF (180ยฐC).
  2. Prepare the protein by cooking shredded chicken or ground beef until fully done.
  3. Chop the vegetables and set them aside.
  4. Warm the tortillas to make them pliable.
  5. In a mixing bowl, combine the cooked protein with diced tomatoes, onions, green chilies, and spices.
  6. Lightly oil your baking dish and spread a thin layer of enchilada sauce at the bottom.
  7. Layer tortillas on the base, followed by a layer of the meat mixture, cheese, and herbs.
  8. Repeat the layers until the dish is full, finishing with extra cheese and cilantro on top.
  9. Bake for 25โ€“30 minutes until the top is golden and bubbly.
  10. Let it rest for 5 minutes before serving. Garnish with fresh cilantro and serve warm.

Notes

For a vegetarian version, replace the meat with black beans or tofu. Use fresh spices and authentic Mexican cheeses for the best flavor.
