- 2 cups apple cider
- 3 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch cake pan.
- In a saucepan, reduce the apple cider over medium heat until it measures about 1/2 cup. Let cool.
- In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
- In a separate bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla.
- Mix in the reduced apple cider and buttermilk alternately with the dry ingredients.
- Pour batter into the prepared cake pan and bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
- Let cake cool in the pan for 10 minutes, then transfer to a wire rack.
- Brush warm cake with melted butter and coat with a mixture of cinnamon and sugar.
- Let cool completely before serving.
Notes
For an extra fall touch, serve with a drizzle of caramel sauce or a scoop of vanilla ice cream.
