  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon

  • 1/2 teaspoon ground ginger
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch cake pan.
  2. In a saucepan, reduce the apple cider over medium heat until it measures about 1/2 cup. Let cool.
  3. In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  4. In a separate bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.
  5. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
  6. Mix in the reduced apple cider and buttermilk alternately with the dry ingredients.
  7. Pour batter into the prepared cake pan and bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cake cool in the pan for 10 minutes, then transfer to a wire rack.
  9. Brush warm cake with melted butter and coat with a mixture of cinnamon and sugar.
  10. Let cool completely before serving.
