Ingredients
- 2 tablespoons butter
- 1 onion, diced
- 2 celery stalks, sliced
- 2 carrots, diced
- 3 cups potatoes, peeled and cubed
- 1½ cups cooked ham, diced
- 4 cups chicken broth
- 2 cups milk or half-and-half
- 3 tablespoons all-purpose flour
- Salt, to taste
- Black pepper, to taste
Instructions
- Melt the butter in a large pot over medium heat.
- Add the onion, celery, and carrots and cook for 5–7 minutes until softened.
- Stir in the potatoes and diced ham.
- Pour in the chicken broth and bring to a gentle boil.
- Reduce heat, cover, and simmer for 15–20 minutes until potatoes are tender.
- In a bowl, whisk the flour into the milk or half-and-half until smooth.
- Slowly stir the milk mixture into the soup.
- Cook on low heat for 5–10 minutes until thickened.
- Season with salt and black pepper.
- Stir well and serve warm.
Notes
Use Yukon Gold potatoes for the best texture. Stir frequently after adding the milk mixture to prevent sticking. Add extra broth or milk if the soup becomes too thick.
