Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups cherry or grape tomatoes
  • 3โ€“4 garlic cloves, minced
  • ยผ cup fresh basil leaves, torn
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • ยฝ teaspoon salt (or to taste)
  • ยผ teaspoon black pepper
  • ยผ teaspoon crushed red pepper flakes (optional)
  • 8 ounces fresh burrata cheese


Instructions

  1. Pat the chicken breasts dry with paper towels.
  2. Season both sides with salt, pepper, and Italian seasoning.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add the chicken and cook 5โ€“7 minutes per side until golden brown and internal temperature reaches 165ยฐF.
  5. Remove chicken from skillet and set aside.
  6. Add minced garlic to the same skillet and sautรฉ for 30 seconds until fragrant.
  7. Add cherry tomatoes and cook 5โ€“8 minutes until blistered and softened.
  8. Lightly press some tomatoes to release their juices.
  9. Return chicken to the skillet and nestle among the tomatoes.
  10. Sprinkle fresh basil over the top.
  11. Tear burrata and place gently over the warm chicken and tomatoes.
  12. Serve immediately, spooning tomato juices over each portion.

Notes

Choose chicken breasts of similar size for even cooking. Pound thicker pieces to uniform thickness if needed. Use fresh basil for best flavor. Add burrata just before serving to keep it creamy. Avoid overcooking tomatoes so they retain some shape and texture.
