Ingredients

  • 2 cups cooked white rice (preferably day-old)
  • 2 tablespoons olive oil (divided)
  • ยฝ teaspoon salt (for rice)
  • 1 pound boneless, skinless chicken breasts or thighs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ยฝ teaspoon salt (for chicken)
  • ยฝ teaspoon black pepper
  • 3 cups mixed greens or arugula
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1 cup sliced cucumbers
  • 1 avocado, sliced
  • ยฝ cup plain Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey
  • 1 small garlic clove, minced
  • 1 teaspoon apple cider vinegar
  • Salt and pepper to taste (for dressing)


Instructions

  1. Heat 1 tablespoon olive oil in a large nonstick skillet over medium heat.
  2. Spread the cooked rice evenly in the pan and press it down into a flat layer.
  3. Sprinkle with ยฝ teaspoon salt and cook undisturbed for 8-10 minutes until golden and crispy.
  4. Flip sections and cook another 5 minutes for extra crunch, then set aside.
  5. Pat the chicken dry and season both sides with garlic powder, paprika, salt, and black pepper.
  6. Heat remaining olive oil in a skillet over medium heat.
  7. Cook chicken 5-7 minutes per side until fully cooked and golden.
  8. Rest chicken for 5 minutes, then slice.
  9. In a small bowl, whisk together Greek yogurt, Dijon mustard, lemon juice, honey, minced garlic, apple cider vinegar, salt, and pepper.
  10. Place mixed greens in serving bowls.
  11. Add cabbage, carrots, cucumbers, and sliced avocado.
  12. Top with sliced chicken and crispy rice.
  13. Drizzle with dressing and serve immediately.

Notes
