Ingredients

  • 1 pound beef sirloin or flank steak, thinly sliced against the grain
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup snap peas or snow peas
  • 1 medium carrot, thinly sliced
  • 2 tablespoons vegetable oil, divided
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon cornstarch
  • 1/2 cup beef broth or water
  • 1 teaspoon sugar or honey
  • 1 teaspoon sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced


Instructions

  1. Slice the beef thinly against the grain and toss with cornstarch until lightly coated.
  2. In a small bowl, whisk together soy sauce, oyster sauce, beef broth, sugar, and sesame oil.
  3. Heat 1 tablespoon of oil in a large skillet or wok over high heat.
  4. Add the beef in a single layer and cook 1 to 2 minutes per side until just browned, then remove from the pan.
  5. Add the remaining oil to the pan and stir-fry broccoli, carrots, and snap peas for about 2 minutes.
  6. Add bell peppers and cook another 2 to 3 minutes until vegetables are crisp-tender.
  7. Stir in garlic and ginger and cook for about 30 seconds until fragrant.
  8. Pour in the sauce and simmer, stirring, until slightly thickened.
  9. Return the beef to the pan and toss for 1 to 2 minutes until heated through and coated.
  10. Remove from heat and serve immediately.

Notes

Slice the beef while slightly cold for easier cutting, cook over high heat, and avoid overcrowding the pan to keep the beef tender and vegetables crisp.
