Ingredients

  • Potatoes (russet potatoes recommended)
  • Onion
  • Butter
  • Milk or heavy cream
  • Salt and pepper (to taste)


Instructions

  1. Sauté the diced onion in half of the butter for 3–4 minutes until soft and fragrant.
  2. Add the diced potatoes and cover with water. Bring to a boil, then simmer for 15–20 minutes until fork-tender.
  3. Drain most of the water, leaving about 1/2 inch in the pot. Add remaining butter and milk or cream.
