Ingredients

- Butter

Instructions
- Sauté the diced onion in half of the butter for 3–4 minutes until soft and fragrant.
- Add the diced potatoes and cover with water. Bring to a boil, then simmer for 15–20 minutes until fork-tender.
- Drain most of the water, leaving about 1/2 inch in the pot. Add remaining butter and milk or cream.
